I recommend the use of a "chimney cleaning log". These are logs that are burnt in the stove or fireplace, releasing chemicals that help break down stubborn tar.
They are available from woodburning centres and many farm suppliers and hardware stores. Ideally I would sweep your chimney 14-28 days after one of these is used.
